Slow barlotto

Tonight’s dinner was slow (kortreist) barlotto (byggotto) with whole grain Norwegian organic barley with:
Mashua (Tropaeolum tuberosum) “Ken Aslet” and “White”
Persian shallots (Allium stipitatum)
Wapato (Sagittaria latifolia)
Carrot / gulrot
Chicory / raddichio (2 varieties) (Cichorium intybus)
Swiss chard / mangold
Leek / purre
Bulb onion / kepaløk (2 varieties)
Tomatoes / tomat (a mix of the last of this year’s crop)
Madeira vine (Anredera cordifolia)
Bay leaf / laurbærblad
Apple / eple 
Dandelion / løvetann
Garlic / hvitløk
Celery / selleri (3 varieties)
Matriske / saffron milkcap (rehydrated)
Chili and a local blue cheese “Hitra Blå”
 

Garlic Barley Weedotto!

The last two nights,  Barley Garlic Weedotto (or Garlic Weed Barlotto) was on the meny at the Edible Garden!
I have a relaxed approach to weeds and weeding and don’t mulch my beds like no dig gardeners do as I consider the weeds to be an important edible resource which increases the yield rather than decreasing as most people think!  If weeding becomes harvesting, it becomes less of a chore!
The greens in the barlotto were mostly weeds harvested when weeding my garlic which has grown well despite the ground cover of weeds (the garlic roots are deeper than the weed roots).

NB! Barlotto (Barley risotto) is a local and more nutritious and healthy food as we can’t grow rice !

Allium oleraceum (wild onion / villøk), Allium scorodoprasum (sand leek / bendelløk), Stellaria media (chickweed), Urtica dioica (nettle / nesle), Taraxacum officinale (dandelion / løvetann), Urtica urens (annual nettle / smånesle), Scandix pecten-veneris (shepherd’s needle / Venuskam; an endangered annual edible weed of grain fields in the UK, in the carrot family, deliberately introduced as a weed in my garden and encouraged by letting some plants self-sow), Sonchus oleraceus (common sow thistle / haredylle; see my book for more on my most productive and most used “weed”) and Chenopodium album (fat hen / meldestokk)!

Tonight’s mix of veg for a barlotto (Norw: byggotto) in which you can put what you want.

Yacon (bottom left) and (middle top) sprouted edible rooted chicory “Cicoria di Chiavari”. The roots had been stored in damp leaf mould in the cellar and had some nice long blanched sprouts…both the roots and sprouts were used

Last night’s dinner: risotto made with rye and barley grain instead of rice with wild and cultivated vegetables and wild fungi:
Parsley, coriander, golpar (Heracleum maximum seed spice), 3 types of pea, baby carrots and broad beans, red mitsuba, 3 types of chicory, common sow thistle (Sonchus), saffron milk caps (matriske), hedgehog fungus (piggsopp), chanterelle (kantarell), Russula spp. , garlic, chili, nettle (variegated), swiss chard (mangold) and Allium nutans…
