My latest book has been published on Monday (with 199 co-authors 😉 ). This is the 300 page Arctic Encyclopaedia and the good news is that it can be downloaded for free at ARCTIC ENCYCLOPAEDIA.
The book explores a wide array of themes—from adventure, aquaculture, food production as well as mining, myths and mental health—with entries spanning the letters A to Ø. Each contributor was assigned a word to define in under 350 words through a short text, poem, photograph, or drawing. My word was GARDEN! You can read my contribution in the picture.

Pizza greens 1st May 2020
Presenting yesterdays greens used on a veggie 100% whole grain barley/spelt/rye sourdough pizza were:
Hablitzia tamnoides (Caucasian spinach /stjernemelde) (eaten now every day since the beginning of March and there’s more to harvest now than at any time since I started!)
Crambe maritima (sea kale / strandkål)
Allium ursinum (ramsons / ramsløk)
Levisticum officinale (lovage / løpstikke) (I call blanched lovage “spring celery” as it’s not that much stronger than celery…and much easier to grow than celery organically)

19th March Veggies
Continuing my series of veggies harvested from the garden. this time used in a baccalao with parsnip (pastinakk), potato (potet), bulb onions .(kepaløk), Jerusalem artichokes (jordskokk), (bought) organic tomatoes and chili. Greens used from the garden:
