Visit from the National Museum and Credo

Continuing a series of visits and projects where art meets my perennial vegetables. Yesterday, I had the pleasure of welcoming a delegation from the National Museum (Nasjonalmuseet), https://www.nasjonalmuseet.no/en
Thanks to Heidi Bjerkan of Credo Restaurant who suggested that they should also visit my garden when in Trondheim on a fact-finding mission in connection with a planned exhibition celebrating 20 years of “New Nordic Food” in 2024 (see https://www.nasjonalmuseet.no/aktuelt/2022/nasjonalmuseets-utstillingsprogram)! Credo are one of Trondheim’s acCREDOited Michelin restaurants whom I’ve had the pleasure to work with and advise several times in the past. Here are a couple of pictures from the couple of hours they were here on a wonderful summer day with the garden at its most seductive :)

Vippa

Yesterday afternoon (8th May 2017) before my evening talk at Nabolagshager, I was invited by Heidi Bjerkan to visit her newest project, Vippa, in Oslo and what a fantastic place it is with amazing views of the Oslo harbour, Hovedøya and Ekeberg (see the pictures)! Project Vippa on Vippetangen in Oslo is a response to Oslo Harbour Authority’s wish for serious projects that can contribute to the revitalization of this area. Heidi Bjerkan, who has previously worked as head chef for the Norwegian royal household (slottet) and whom I’ve got to know in Trondheim where her main project is the restaurant Credo, and in particular through our collaboration during the Trondheim film festival Kosmorama in March (see http://www.edimentals.com/blog/?p=10184 and http://www.edimentals.com/blog/?p=10138 ). Credo is currently re-establishing itself in a new location in Trondheim.
 
With these two projects running in parallel, Heidi is an extremely busy woman! Vippa opened only a month ago with its streetfood concept and already has a good reputation (most people that I’d asked knew about it) and the number of people visiting has been over expectations. The aim is that Vippa will be a food, culture and learning centre for the people. I am privileged to have been asked to act as adviser and inspirator for local farms producing the food for both restaurants and planting of edimentals around the restaurants and on the roof of Vippa, in particular perennial permaculture inspired plants! I am happy to do this as sustainable food production and recycling of food waste to make soil is an important part of both Credo and Vippa concepts and the adoption of permaculture in this way may be a first!

Kosmorama Film (and Food) Festival

Join me at Trondheim’s Kosmorama Film Festival’s Gourmet Cinema on Thursday March 9th at 1600! You will see a special screening of Michael Pollan’s  documentary “In Defense of Food”, experience among other things a multi-species dish showing off the incredible abundance of food available to us in Trøndelag, even early in March. The food will be a collaboration between myself, gourmet restaurant Credo in Trondheim (Heidi Bjerkan) and the organic farm they work with, Skjølberg Søndre (Carl Erik Nielsen Østlund and Elin Östlund). There will also be a Food Talk after the film between us 3 (Heidi, Carl Erik and myself) together with producer and director Michael Schwarz! This will be a fun evening (English)…
In addition, I’m taking part in the so-called Kulinarisk Kino which is the screening of the film NOMA – My Perfect Storm followed by dinner at Credo, which I hope will include a very special Nodic perennial vegetable served for the first time in a restaurant in Norway :)
