{"id":9442,"date":"2016-12-28T20:28:30","date_gmt":"2016-12-28T19:28:30","guid":{"rendered":"http:\/\/www.edimentals.com\/blog\/?p=9442"},"modified":"2024-08-09T08:53:23","modified_gmt":"2024-08-09T06:53:23","slug":"9442","status":"publish","type":"post","link":"https:\/\/www.edimentals.com\/blog\/?p=9442","title":{"rendered":"Around the world with Erythroniums"},"content":{"rendered":"<figure id=\"attachment_9458\" aria-describedby=\"caption-attachment-9458\" style=\"width: 300px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/www.edimentals.com\/blog\/wp-content\/uploads\/2016\/12\/P4295693.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-9458 size-medium\" src=\"http:\/\/www.edimentals.com\/blog\/wp-content\/uploads\/2016\/12\/P4295693-300x225.jpg\" alt=\"OLYMPUS DIGITAL CAMERA\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.edimentals.com\/blog\/wp-content\/uploads\/2016\/12\/P4295693-300x225.jpg 300w, https:\/\/www.edimentals.com\/blog\/wp-content\/uploads\/2016\/12\/P4295693.jpg 800w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><figcaption id=\"caption-attachment-9458\" class=\"wp-caption-text\">Erythronium japonicum, katakuri in my garden<\/figcaption><\/figure>\n<p>As an introduction to two soon to be published blog posts concerning visits to two nature reserves in Japan during the mass flowering of katakuri (<em>Erythronium japonicum<\/em>) in early spring 2016, here is a short around the world with edible Erythroniums review, with an album of pictures of various species and varieties that I\u2019ve grown here in Malvik together with pictures taken in various botanical gardens!<\/p>\n<p>Known in English variously as trout or fawn lilies (on account of the spotted leaves) and dog\u2019s tooth violets (not related to violets, the bulbs resembling dog\u2019s teeth), there are some 25 species found in North America and Eurasia\u2026<\/p>\n<p>There are a number of species in North America, several, if not all of which were used by Native American tribes. In Daniel Moerman\u2019s Native American Ethnobotany (<a href=\"http:\/\/naeb.brit.org\">http:\/\/naeb.brit.org<\/a>), 5 species are documented as used for food, with yellow flowered <em>E. grandiflorum<\/em> (Glacier or Avalanche lily) with most records, including: \u201cBulbs eaten raw and cooked, dried for winter use; small root ends of corms eaten as candy by children; made into a pudding by boiling black tree lichen, dried saskatoons (<em>Amelanchier<\/em>), salmon eggs, lily bulbs, or bitter root (<em>Lewisia<\/em>) and deer fat\u201d. Other species for which the bulbs were either eaten raw, baked, steamed, cooked and (sun)dried for later use are <em>E. mesochoreum, oregonum <\/em>and<em> revolutum. <\/em>An interesting technique was to chew the root and spit it into a river to make fish bite (trout, I presume ;) ). One informant says, however, that the raw corms were poisonous (but there are many records of them being eaten raw). <em>Erythronium oregonum <\/em>bulbs were, according to ethnobotanist Nancy Turner, an important food for the Kwakiutl people on Vancouver Island in Canada. They were eaten raw, baked, boiled, or dried.<\/p>\n<figure id=\"attachment_9499\" aria-describedby=\"caption-attachment-9499\" style=\"width: 226px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/www.edimentals.com\/blog\/wp-content\/uploads\/2016\/12\/HPIM7774.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-9499 size-medium\" src=\"http:\/\/www.edimentals.com\/blog\/wp-content\/uploads\/2016\/12\/HPIM7774-226x300.jpg\" alt=\"Probably seed propagated Erythronium californicum &quot;White Beauty&quot; \" width=\"226\" height=\"300\" srcset=\"https:\/\/www.edimentals.com\/blog\/wp-content\/uploads\/2016\/12\/HPIM7774-226x300.jpg 226w, https:\/\/www.edimentals.com\/blog\/wp-content\/uploads\/2016\/12\/HPIM7774-300x398.jpg 300w, https:\/\/www.edimentals.com\/blog\/wp-content\/uploads\/2016\/12\/HPIM7774.jpg 480w\" sizes=\"auto, (max-width: 226px) 100vw, 226px\" \/><\/a><figcaption id=\"caption-attachment-9499\" class=\"wp-caption-text\">Probably seed propagated Erythronium californicum &#8220;White Beauty&#8221; in my garden<\/figcaption><\/figure>\n<p>The best North American modern firsthand account is as usual that by Samuel Thayer in his wonderful book Nature\u2019s Garden. He notes that the species he uses most is woodlander <em>Erythronium americanum<\/em>, not documented as edible (only medicinal) by Moerman. He rates the early spring bulbs highly, tasting <em>\u201c like sweet corn or snow peas..crunchy, sweet and tender raw\u201d\u2026<\/em>but he notes that they are small and it takes a lot of effort to pick a decent amount (he also notes that <em>E. grandiflorum <\/em>bulbs, a species that grows in alpine meadows, are bigger). Various early foraging authors in the 50s and 60s, including Euell Gibbons, note that the leaves, flower stalks, buds and flowers of <em>americanum<\/em> are eaten raw and cooked. Thayer is not fond of the leaves or flowers, however, saying that they are \u201cbest before unfurled\u2026bitter aftertaste\u2026worse after cooking\u201d, but he comments that others enjoy the taste.\u00a0 I haven\u2019t noticed any bitterness the times I\u2019ve tried different species. Gibbons also mentions that white trout lily (<em>E. albidum<\/em>) has similar uses to <em>americanum<\/em>.<\/p>\n<p>The species that grows best for me is dog\u2019s tooth violet <em>Erythronium dens-canis<\/em>. This species was once considered to range from Southern Europe to Japan, but the Eastern forms are now considered to be separate species, <em>E. sibiricum <\/em>and katakuri (<em>E. japonicum<\/em>), both of which I grow, but clumps grow very slowly, if at all! In Sturtevant\u2019s Edible Plants of the World (1919), it\u2019s stated that the Tartars collect and dry the bulbs of <em>dens-canis<\/em> and boil them with milk or broth. Cornucopia II informs us that \u201cRoots eaten with reindeer\u2019s or cow\u2019s milk in Mongolia and Siberia. Leaves boiled, starch from roots..\u201d (presumably this is what we now know as <em>sibiricum).<\/em><\/p>\n<p>Ken Fern in Plants for a Future recommends <em>E. <\/em>\u201cPagoda\u201d and \u201cWhite Beauty\u201d as they \u201cgrow freely when well-sited\u201d in the UK.\u00a0 Alan Carter in Aberdeen has firsthand experience and on a good blog about Erythroniums for the forest garden (see <a href=\"https:\/\/scottishforestgarden.wordpress.com\/2013\/07\/06\/eating-dogs-tooth-violet\">https:\/\/scottishforestgarden.wordpress.com\/2013\/07\/06\/eating-dogs-tooth-violet<\/a>) rates \u201cPagoda\u201d as the best one to grow for eating, due to its larger bulbs and states that \u201cMy favourite way of cooking them is to slice them thinly across\u00a0and fry the discs\u201d. \u00a0Pagoda is a hybrid between\u00a0<em>Erythronium tuolumnense<\/em> and\u00a0<em>Erythronium californicum\u00a0<\/em>&#8216;White Beauty&#8217; and is readily available.<\/p>\n<p>All the North American species I\u2019ve tried including Pagoda have sadly not survived more than a few years at best in my garden.<\/p>\n<p>As mentioned,<em> Erythronium japonicum<\/em> will be the feature of two follow-up blogs and I will discuss this one more later, but the bulb starch, known as katakuri-ko, was important and harvested from the wild in the past in Japan,\u00a0 but nowadays potato starch is used in its place as the wild stands are considered by some to be under threat, not only dug up for food but also removed from the wild for the ornamental plant trade\u2026 We will also see that both the leaves and flowers are used in Japan. If using leaves, it\u2019s best to only one of the two leaves produced each year so as not to weaken the stands too much.<\/p>\n<p>If anyone wants to know how these beauties are grown in Scotland
