Bistorta officinalis is a circumpolar species, one of the 80 in my book, the most important ingredient in Easter Ledge pudding in Northern England and Norwegian Explorer Roald Amundsen and his crew ate the tubers of this plant when overwintering in the arctic, known as Eskimo potatoes. One of the 80 in my book!
